What’s for Dinner: Italian Veggie Bake

All organic,  non-GMO: Eggplant,  zucchini,  tomatoes, garlic polenta,  baby Portobello mushrooms, and pine nuts in spaghetti sauce. Wine optional as well as garlic bread.  This is one of my favorite meals.
